  9. With the butter being (mostly) liquified, I am wondering about how to make these vegan friendly. Subbing the butter for a canola oil, or something else that is neutral; subbing the eggs and yolks (in my case) with sourdough starter as a binder and leavening agent; maybe adding a touch of cornstarch, too, for mouthfeel and binding; refrigerating for at least 24 hours to hydrate the flour and get the sourdough to work through the dough.
    Any thoughts?
