Join Chris Morocco in the Bon Appétit Test Kitchen as he makes chocolate chip cookies. The addition of browned butter truly puts these cookies over the top. It makes them crispy-edged, chewy-centered, yet still rooted in classic cookie flavor. Oh, and no mixer essential, so there is no excuse not to make them.

  9. With the butter being (mostly) liquified, I am wondering about how to make these vegan friendly. Subbing the butter for a canola oil, or something else that is neutral; subbing the eggs and yolks (in my case) with sourdough starter as a binder and leavening agent; maybe adding a touch of cornstarch, too, for mouthfeel and binding; refrigerating for at least 24 hours to hydrate the flour and get the sourdough to work through the dough.
    Any thoughts?

  10. anyone who has anything bad to say to chris can fight me
